Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the lamb cubes and cook until browned on all sides, about 10 minutes. Transfer the lamb to the slow cooker.

2. Add the onion and garlic to the same skillet and cook until softened, about 5 minutes. Add the cumin, coriander, ginger, paprika, turmeric, and cinnamon, and cook for 1 minute more.

3. Transfer the onion mixture to the slow cooker. Add the diced tomatoes, chicken broth, dried apricots, raisins, and olives. Stir to combine.

4. Cover the slow cooker and cook on low for 8 hours, or until the lamb is very tender.

5. Serve the lamb tagine garnished with fresh parsley.
