Chili Colorado Crock Pot Recipe

Ingredients
- 1 lb. beef chuck roast, cut into bite-size pieces

- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14.5 oz) can diced tomatoes
- 1 (4 oz) can diced green chiles
- 1 (15 oz) can red kidney beans, rinsed and drained
Instructions
1. Place beef, onion, bell pepper, garlic, chili powder, cumin, oregano, salt and pepper in a slow cooker. Pour diced tomatoes and green chiles over the top. Stir to combine.
2. Cover and cook on low for 6-8 hours, or until beef is tender.
3. Stir in kidney beans and cook for an additional 30 minutes.
4. Serve with your favorite toppings such as cheese, sour cream and/or cilantro.

Notes
This dish can also be cooked on the stovetop. To do so, brown the beef in a large skillet over medium heat. Add the onion, bell pepper, garlic, and spices, and cook for 5 minutes. Add the tomatoes, green chiles, and kidney beans, and simmer for 20-30 minutes, or until beef is cooked through.
