Ingredients

- 1 cup heavy cream
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
1. Set the Instant Pot to sauté mode, and add the bacon. Cook until the bacon is crispy, about 5 minutes.
2. Add the onions and garlic, and cook until the onions are softened, about 5 minutes.
3. Add the potatoes, corn, chicken broth, and thyme, and stir to combine. Place the lid on the Instant Pot, and set to “manual” and cook for 8 minutes.
4. Once the cooking time is up, let the pressure release naturally for 10 minutes, then do a quick release.
5. Carefully open the lid, and stir in the heavy cream. Season with salt and pepper, to taste.
6. Serve the chowder hot, garnished with fresh parsley, if desired.
