Ingredients



- 2 pounds of beef chuck, cubed

- 1 teaspoon of oregano
- 2 tablespoons of tomato paste
- 1 (10 ounce) can of diced tomatoes
- 1 (4 ounce) can of diced green chiles
- 1 cup of chicken broth
- Salt and pepper to taste
- 2 tablespoons of cornstarch
- 2 tablespoons of water
- 1/4 cup of fresh cilantro, chopped

Instructions



1. In a medium bowl, combine the beef cubes with 1 tablespoon of olive oil, 1 minced garlic clove, and salt and pepper. Toss to combine and set aside to marinate for at least 30 minutes.
2. Set the Instant Pot to the sauté setting and add 1 tablespoon of olive oil. Add the onion, bell pepper, 1 minced garlic clove, chili powder, cumin, and oregano and sauté for 5 minutes.
3. Add the marinated beef and sauté for another 5 minutes.
4. Add the tomato paste and stir to combine.
5. Add the diced tomatoes, green chiles, and chicken broth and stir to combine.
6. Secure the lid on the Instant Pot and set to high pressure for 25 minutes.
7. Once the time is up, allow the pot to naturally release its pressure for 10 minutes.
8. In a small bowl, whisk together the cornstarch and water to make a slurry.
9. Open the pot and stir in the slurry and the fresh cilantro and stir to combine.
10. Serve with rice or beans and enjoy!
