Prep Time

Ingredients

Instructions

1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes. Add the shredded chicken and cook until the chicken is cooked through, about 5 minutes.

2. Transfer the chicken mixture to a 6-quart slow cooker. Add the black beans, corn, tomatoes, green chiles, chili powder, cumin, oregano, salt, black pepper, cayenne pepper (if using), and chicken broth. Stir to combine.

3. Cover and cook on low for 8-10 hours or on high for 4-6 hours. Serve with your favorite toppings and enjoy!
