Coffee-Infused Banana Bread

Ingredients:


- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup butter, softened
- ¾ cup packed light brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- ½ cup brewed coffee
- 1 tablespoon espresso powder

Instructions:


1. Preheat oven to 350°F. Grease a 9x5-inch loaf pan.
2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.
3. In a medium bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
4. Mash the bananas in a separate bowl. Add the banana and coffee to the butter and sugar mixture, and stir to combine.
5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
6. Pour batter into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow to cool before serving.
