Prep Time
This recipe is great for busy days, as it only takes about 10 minutes to prepare. You’ll need to chop up some onion, mince some garlic and measure out all the ingredients before you can get started. Once that’s done, you’re ready to begin.
Cook Time
Once everything is prepped, you just need to add all the ingredients to the slow cooker and let it do the work. The total cook time is about 3 hours, but you can also cook on low for 6-8 hours or on high for 4-6 hours. The longer you cook, the thicker and creamier the sauce will be.
Ingredients
- 2-3 boneless, skinless chicken breasts
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
- 4 cups chicken broth
- 1 (16 oz) package fettuccine noodles
- 4 ounces cream cheese, cubed
- 1/2 cup Parmesan cheese, grated
- 1/2 cup heavy cream
- 2 tablespoons fresh parsley, chopped
Instructions
1. In a large skillet over medium heat, add olive oil and diced onion. Cook until softened, about 5 minutes. Add garlic and cook for an additional minute. Remove from heat and set aside.
2. Place chicken breasts in the bottom of the slow cooker. Top with onion and garlic mixture. Sprinkle with Italian seasoning, black pepper, and salt. Pour chicken broth over the top.
3. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
4. When chicken is cooked through, remove from slow cooker and shred. Place back in the slow cooker.
5. Add fettuccine noodles to the slow cooker and stir to combine. Cover and cook on high for an additional 30 minutes.
6. When noodles are cooked, add cream cheese, Parmesan cheese, and heavy cream. Stir until cream cheese is melted and sauce is creamy.
7. Serve with freshly chopped parsley and extra Parmesan cheese, if desired.
