Description

Chinese pot stickers, otherwise known as jiaozi, are a type of dumpling made of thin dough wrappers filled with a variety of ingredients, including pork, shrimp, and vegetables. While they are traditionally served as an appetizer or snack, they can also make a satisfying meal when served with a side of steamed vegetables or a simple salad. This recipe uses a combination of pork and shrimp for the filling, but you can customize it to your liking.

Prep Time

For this recipe, you'll need to allow about one hour for the dough to rest. To save time, you can also use store-bought wrappers, but they won't be as flavorful as homemade.

Cook Time

The cooking time for pot stickers is relatively short, taking about 10 minutes to fry them.

Ingredients

- 2 cups all-purpose flour
- 2/3 cup warm water
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 pound ground pork
- 1/2 pound shrimp, peeled and deveined
- 2 tablespoons finely chopped chives
- 1 teaspoon grated ginger
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 2 tablespoons water

Instructions

1. In a large bowl, combine the flour, water, oil, and salt. Knead the dough until it is smooth and elastic, about 10 minutes. Cover the bowl with a damp cloth and let rest for 1 hour.

2. In a separate bowl, combine the pork, shrimp, chives, ginger, soy sauce, and sesame oil. Mix well to combine.

3. Roll the dough into a log and cut into 12 pieces. Flatten each piece into a thin circle.

4. Place 1 tablespoon of filling in the center of each wrapper. Fold the wrapper in half and press to seal the edges.

5. Heat the vegetable oil in a large skillet over medium heat. Add the pot stickers and cook for 5 minutes.

6. Add the water and cover the skillet. Cook for an additional 5 minutes, or until the pot stickers are golden brown and cooked through.

7. Serve hot with your favorite dipping sauce.

Equipment

- Large bowl
- Rolling pin
- Skillet

Notes

- You can also steam the pot stickers in a steamer basket over boiling water.
- You can also use store-bought wrappers if you're short on time.
