Ingredients
For the cake:
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup unsalted butter, softened
1 1/4 cups granulated sugar
3 large eggs
1 teaspoon pure vanilla extract
1 cup sour cream
For the streusel topping:
1/2 cup all-purpose flour
1/4 cup packed light brown sugar
1 teaspoon ground cinnamon
4 tablespoons unsalted butter, melted
3/4 cup chopped pecans
Instructions
Preheat oven to 350°F. Grease a 9-inch springform pan with butter and line the bottom with parchment paper. Set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, cream the butter and sugar together with an electric mixer until light and fluffy. Beat in the eggs, one at a time, then add the vanilla extract and mix until combined. With the mixer on low speed, slowly add the flour mixture, alternating with the sour cream, until everything is combined.
Pour the batter into the springform pan and spread it out evenly. Set aside.
To make the streusel topping, combine the flour, brown sugar, and cinnamon in a medium bowl. Pour in the melted butter and mix until everything is combined. Stir in the pecans. Sprinkle the streusel topping evenly over the batter in the pan.
Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Let cool for 15 minutes before removing the sides of the pan.
Serve warm or at room temperature. Enjoy!
